A sweet sense of Serendipity.
Tomorrow, I am homeward bound. Not like the movie, although that’s a great movie. Shadow was my favorite. Anyways, I am heading home from New York tomorrow!!
We overslept pretty late this morning! I woke up at 10:30 and fell right back to sleep. We finally got out of bed at 11:30! YIKES!! We went to bed late so it was good to get enough sleep, but still.
Since I knew we’d be eating lunch soon I started my morning with a strawberry Chobani. Just enough to hit the spot until we found our lunch local.

We headed to Museum of Modern Art(MoMA) since my mom has a membership there. On the way we took pictures..

We made it to MoMA and headed straight to one of their cafe’s “Cafe 2″ it’s on the second floor. We decided to share an Antipasti tasting(choice of three).

We chose the beet salad with fresh ricotta and aged balsamic, roasted brussels sprouts with shallots, chestnuts, and rosemary balsamic, and the white bean salad with roasted mushrooms and shaved pecorino.

We also shared the duck prosciutto and arugula salad. The menu told us it also had seckel pear, humboldt Fog goat cheese, candied pecans and sherry vinaigrette.

We also shared the mushroom tart.

To drink, I chose a glass of the Nero d’Avola 2007. My sister chose the Valpollicella 2008.

Yumm! I am not a huge ricotta fan, so the beet was just all right. My sister liked it a lot. My favorite were the Brussels, oh man am I going to try and recreate this. SO yummy!! The balsamic and rosemary worked so well together. We have fresh rosemary in our “garden” so it will be perfect for that. So yummy.

The salad was delicious. I love cheese, and this stuff was pretty potent but so good! The dressing helped relieve some of the bite from the arugula and I think there’s no better match in greens then candied nuts, cheese and pears(or gala apples)! SO yummy! The duck prosciutto was pretty good as well, it added a nice salty bite to balance all of the other flavors. The flavors worked so well together. Delicious!

The wild mushroom tart was so amazingly mushroomy, obvious. But it was SO warm and comforting. This was delicious!
Reading the menu, I got SO excited! I love how much food excites me. I was like a kid in a candy store(although we did go to a candy store later).
I appreciate the attention and care they put into their food at the museum. It was delish!

We then headed into some galleries that included Monet.

It was amazing to be standing so close to his work. We didn’t spend a lot of time in MoMA this time, but I will be back for sure.
I have to bring Adam back for this at least..

The Tim Burton exhibit!! Okay they absolutely positively did not let us take pics. This was farther away. My sister was trying to take a picture of just the entrance of the exhibit with her phone and they told her no. But oh my gosh guys, really really neat! If you are a fan of Tim’s at all, or at least enjoy some of his work you will love this. It has so much of his work from the time he was just a kid. Even seeing school papers he wrote in class, it’s just really incredible what has been saved. He has a twisted mind that one, but it’s so cool to get a look inside even if only a little. Kind of creepy, really cool. We even saw things used in his movies, like the dolls that catch on fire in “Charlie and The Chocolate Factory” when they are first walking in. Also, what they used to make “A Nightmare Before Christmas” and “Batman Returns”. Ahhh! You will just have to come see the exhibit, it’s open until next April!
We check out some amazing photography exhibits but it was getting late (and dark at 4:30) so we headed out, I will for sure be coming back! I loved it.
When we got near the plaza we ran into a movie premiere!!

Serendipity 3!!!!!


The movie was really cute. I have wanted to come here for so long! I have been to NYC many many many times. My mom and sister lived here in 2007 so for a year, this was home! We had made reservations once but they happened to be CLOSED right before I got there! Sad! Luckily today was my day.
Serendipity-“The art of finding the pleasantly unexpected by chance”. Gosh I love that! I had a very serendipitous experience.
We sat upstairs!(They sat upstairs in the movie!!!!)
We were a little hungry so we shared clam chowder, and french fries. What can I say. They were both delicious!!!


I ordered the most famous item on the menu(with a twist!)
They had a frozen MINT hot chocolate, instead of just the frozen hot chocolate. This was quite the experience.

No, I’m not yawning. My sister thought it looked like I was a giant about to eat that man in the first picture. So we literally tried for 5 minutes to take the last two. It sounded much like this:
Jen-”Move forward, not that much move back, move a little more forward, move up, up more, up more, to the side, open wide, open wide!!!”
It was really funny, and sort of awkward. But I think it was a semi-success.
We walked around more, and ended up at a bar. It’s a lot of fun to do non-touristy things in NYC, like head into a local bar it’s like a whole ‘nother world!
I first had a “Black Velvet” which is Guiness with hard apple cider. We met up with some of her friends at another bar but I just sipped water, I am tired of beer!! Although I had one when we moved to “Brother Jimmy’s” not the one she works at, but one nearby. There I had a Blue Moon. I made sure to sip water along with each beer this time.

I ate this as my late dinner, some amaaaaazing macaroni and cheese, a small piece of fried chicken, and two hush puppies with maple butter. Umm, yeah. It was awesome!! I love my southern comfort foods.

She wanted to go see some other friends, but I opted to come home. Thankfully she walked me back.
It’s now 3 AM and I am still up!!
“It’s 3AM and I want to go to beeeddd!” (kudos to whoever names that band.)
I’m off to bed, my body is going to be soooo off when I get home! But I had a wonderful time. I really truly enjoyed the visit with my sister and I can’t wait to come back already and I haven’t even left yet!
Tomorrow I am getting up early to pack, and get ready to head home. I am grabbing a taxi at 12:15 when my sister leaves for work and my flight leaves at 2:20. I should be posting during that time since there’s wifi on the flight!
I love that I can be productive when flying!!

My body needs a break.
Well, today has indeed been a mostly lazy Saturday. I think part of it was that I was worried about leaving sweet Leo by himself for the first time. Well, I think he was more then happy that we left him alone today! More on that in a bit..
For breakfast I had a Kashi waffle with delicious pumpkin butter, and a sliced honey crisp apple..



Honey crisp apples are so huge..I was overwhelmed with sliced apples..super yummy breakfast though!
It was a cold night, and Leo was shivering in the morning! The apartment stayed pretty chilled throughout the morning so I brought out the space heater and set it near Leo. He enjoyed it.



I think he enjoyed it anyways, what do you think?
He wasn’t eating much(he usually gets depressed when my sister first leaves him). But he ate a greenie! I should have taken a picture for him..
You will be seeing lots of pictures of Leo while he’s with us so my sister can be updated on how he’s doing as well by seeing it for herself! Pretty convenient.
I was dreading going to the gym, because it was the first time leaving him alone. I finally got over it and we headed to our apartment gym. I ran/walked 2.05 miles this morning, it took 28 minutes including a three minute warm-up and cool down. I have decided I am just going to commit to running two miles three times a week. Doesn’t sound like much, but I am going to work on that for a week and see how I feel, I am starting with the s’s..small steps and slow to be safe! I get ahead of myself and want to run a 10k tomorrow, but I can’t. I have to train smart and hard but carefully and build up my strength. I am starting from the bottom, but you have to start somewhere right?

Adam made lunch today!

A creamy bowl of Pacific Natural Foods butternut squash soup.

A grilled mozzy and basil sammie with a little EVOO, S&P. I may need a dictionary for the abbrevs I use.
All together-

To the soup, Adam added some fresh basil.
The soup was nice and creamy, although made more sweet then savory. We added some S&P to make it more savory, but the sweetness overpowered it.
It was pretty good, although I am not a fan of sweeter soups. I also had a few pretzel crisps, but the pictures came out super blurry!
We cleaned around the apartment a bit to get ready for the arrival of our Christmas tree tomorrow! YAY! I am so beyond excited. We headed out around 5 to a coffee shop to get work done but ended up being invited to dinner with my mother and father-in-law. Before we left to meet them, Adam and I got coffee at Barnie’s. I got myself a non-fat pumpkin spice latte..

Mmm, I am still not over pumpkiny goodness yet.
We headed out and met them at Cricketers Arms, an English pub in the heart of Orlando. They were on a mission for some Boddingtons. It was going to be pub grub and probably not the healthiest, but I knew I could find something I would like! Plus, I love a good brew.
They ordered some “Black and Tan” onion rings. I had these plus a very small ring.

That’s my beer filled to the glass, I had a Boddingtons as well. Reminds me of that Friends episode where when they get back from London they talk about how much they would love some Boddington’s. I had to oblige love of Friends. It was good and bitter, but I liked it! Most of all, I liked the creaminess of the foam, it was amazingly smooth!
I also drank the lighter of these two samples.


I ordered the roasted chicken which was described on the menu as being served with roasted potatoes and vegetables.
It was yummy, except a few bites in I realized that the chicken and potatoes were definitely cooked in oil. I believe the potatoes were fried a bit, I don’t believe they get that crispy just by being roasted. My tummy wasn’t too happy about that.
I drank my beer, along with a Yuengling. Beer overload much? I didn’t feel tipsy, but I did feel stuffed to the max.

Also a few “chips” with vinegar and ketchup. I couldn’t resist, they looked too good!

I stood up to find I was way too full and had overeaten. I eat so fast sometimes and don’t realize how full I really am. That’s one thing I really need to work on.
The restaurant was really cute.

So was the husband.


We headed to Macy’s after to check out some items we are thinking of giving as gifts.
We were checking out an instant espresso machine that uses a little pod of ground espresso beans to instantly make the perfect shot. I LOVE espresso, and so does Adam. That’s all we drank in Italy, no large coffees there!
Thankfully, and amazingly they had free samples. We watched the instant gratification right before our eyes. We may ask for this for Christmas.

Hey, I will take free espresso any day! We then headed to Target to get some things(like green monster essentials) and a sweater for Leo, they didn’t have cute doggie ones so I got one for a 12-month old boy. Hopefully it’ll work since he was so cold last night!
Tomorrow is officially a “detox” day for me. I need to get back into good habits. I have been feeling lazy and beat down and I can tell it’s because of the food I have been eating. It’s great to eat freely on Thanksgiving and Christmas but the in-between time is the perfect opportunity to eat healthier and be more active. It’s all about balance, and I am still figuring it out.
I plan on having a green monster in the morning, afternoon(along with some veggies for lunch) and a large salad with veggies. Very light, lots of veggies, fruit and LOTS of H2O. My body is telling me it needs a break. I am happily going to listen. More running, more cross-training, and better eating. It’s going to the be the healthiest holiday season for me yet!

Mmmm, our house smells of delicious pine thanks to a Bath and Body works candle. Highly recommend you get one! Especially if you don’t get a real tree, or a tree at all around this time of year! It’s putting me in a better mood already!

Oh and Leo ate his dinner tonight! Yay progress! He’ll be feeling better in no time.

Apple Pie, my oh my!
Well, for some reason my post wouldn’t upload last night. I am posting it this morning..
Finally time for the apple pie recipe! Well, dinner before dessert right?

I raided the pantry for dinner and found this box in our closet, it was part of a BOGO at Publix.

All together with a black bean burger topped with spinach and some 365 ketchup and hot sauce.
I also scooped the hot rice pilaf onto a handful of spinach so it would wilt a bit.
A large plate of edamame for the hubs and I to share as well..

Wine or beer? Wine or beer? Tonight, we chose beer!
My sister picked up a pint of Publix raspberry sherbet. I actually wanted sorbet(which is a bit healthier) but oh well. This was plenty yum and brought be back to when I was a kid. This stuff was my favorite!

We ate around 6 and by 9 I was starving..my stomach is used to too much food..

Snack pack of carrots, hummus and some mozzy. I only ate half of the hummus. Along with half of an unpictured toasted sandwich thin.

With some pomegranate juice water.
Okay and who left the bag of Jelly Belly’s here?!? Adam had to take them away..fast..

Now for my apple pie recipe!
When I first made this, I used Paula Deen’s recipe. I made some changes(and included a lot less butter..sorry Paula!).
Here is my version:
I just use a regular store bought pie crust, it was easiest!
For the filling:
(Note: this was for a deep pie dish, you can adjust how much of each ingredient you use to fit your pie pan!)
-6 small (or three large) Granny Smith apples, or any baking apples peeled and chopped(or sliced)
-24 Oz. apple sauce
-1 1/2 tablespoons ground cinnamon
-1/2 heaping cup sugar
-1/4 cup light brown Sugar
-One Lemon
-Two tablespoons flour
- Place chopped apples in a large bowl.
- Squeeze the lemon juice into the bowl over the apples, keeping the seeds out and stir to cover all of the apples.(This prevents browning and brings out the sweetness in the apples)
- Add 24 oz. plain, unsweetened apple sauce to the apples.
- Add cinnamon, sugar, brown sugar and mix the contents of the bowl.
- Add flour and mix one more time until mixed well.
- You can add more cinnamon/sugar to taste if needed.

If it tastes good in the bowl, it will taste good in the pie!
Line the bottom of the pan with one sheet of pie crust. I love to weave strip of pie crust on top and add a little shape in the middle..

Normally I just do two leaves, but since this was my only contribution so I wanted to go all out.
To top it, I used..
- 3 tablespoons flour
- 1 tablespoon butter
- A pinch of salt
..you can add sugar which caramelizes better, to be honest I forgot the sugar! But it still turned out yummy and with so much sugar in the filling, you really don’t need anymore!
Bake at 425 for 10 minutes and then reduce to 350 for another 45 minutes. Definitely cover the edge of the crust with foil once it starts browning, it will brown a lot quicker then the rest of the crust!

Next time, I am going to it completely from scratch.
I love making apple pie!

Off to the market..
After church we headed to a farmer’s market we hadn’t been to yet! This one is in Maitland at Lake Lily. I love that it’s lined up along the lake so you don’t feel overwhelmed by huge groups of people.

It was past lunch time and we spotted a booth cooking up some yummy fare. I had an arepa(which I shared with Adam)..

I also had a bite of Adam’s steak empanada. SO DELICIOUS!! I will be getting one of those next time.

Adam took this of me walking and while I wasn’t going to put in he said, and I quote “Don’t you delete that, you put that in your blog!” here it is Adam. Happy?
We picked this up while we were there..

I have been seeing pumpkin butter all over the blog world and I have needed some..luckily we found a woman who cooks up jams, butters, and spreads. I wanted to buy at least five other jars but we restrained ourselves to this.

When we got home we split up a large apple and I dipped mine into some of that yummlicious pumpkin butter. SO GOOD! Like dessert..
We then hit up Super Target for groceries and came home to make dinner.
We started with an appetizer (which was supposed to be a side but once we had a taste, we couldn’t stop eating them!) Kale Chips! Thanks to Kath.
This was our second batch it did not take long to devour. I ate mine with some organic ketchup and hot sauce!

I got hungry waiting for our dinner to finish so I had a cheese stick..


I waved Sunday goodbye with a beer..then dinner was served! I was so hungry I didn’t realize that I hadn’t taken a picture until I got to to this point..

Adam and I shared the celery sticks. We made baked chicken tenders with panko breadcrumbs that we added paprika, chili powder, garlic powder, and S&P to. The chicken soaked in an egg mixture with hot sauce. Baked at 375 for 15-20 minutes until cooked.

We made them healthier chicken wings with home made buffalo sauce(not as much butter as they normally make the sauce) with some vinegar and hot sauce. We shared a small side of blue cheese and celery. My favorite bite is one with a little blue cheese & a little sauce. I always get my wing sauce on the side for the perfect mix. These were much healthier then normal chicken wings and were mighty tasty! It’s all in the spices baby..
We used “steam and mash” ore ida potatoes. Once they steamed in the micro, they were mixed with plain yogurt, milk, a little smart balance and some salt.

This was a perfect “southern comfort” meal for a Sunday with the fried part!
I apologize for the picture of my dinner! My pictures have been sad. Hopefully they will look much better soon.
For dessert, of course, some more wedding cake! We each had a slice about the size as the one of the two I had last night. I also had this an hour later.

The perfect extra kick of sweetness I needed!
So, I don’t even know if I will be able to run the outback distance classic since I haven’t been running as much..at all. I was sick a few weeks ago and had to take some time off which I hate. I get so into a routine and become so motivated to workout regularly and then when I am sidelined I lose it and have to get out of being lazy and back to being active. I know the race is not too far but my legs give me issues and pushing hard since I haven’t run 3 miles since my last 5k I don’t know if I want to push it. I would much rather work out earlier and get a few miles in on my own. I think I am just going to put more effort into exercise this week and run 3 miles that morning on my own. Hopefully this week will give me the jump start I need to be motivated again. Once I get into the swing of it again I get more motivated. But it takes a few times to get back into the habit of exercising daily. I think our hotel in Jacksonville probably has a gym so that will be good. Plus I need to save my $$ for a couple races I want to do in the next couple months.
I felt so guilty at first about it. But really..I am still going to run, I am still going to work out and be active. I just want to listen to my body and not be stressed out when I should be enjoying time with my family.
Some exciting things are happening this week, besides Thanksgiving, and their are so many things to be thankful for!

I am off to Jacksonville to my aunt and uncle’s house..so excited! We’ve been wanting to spend Thanksgiving there for a few years now. It’s also supposed to be a little cooler which is exciting.

A sweeter night..
Dinner was pizza and beer. Sometimes that’s all I need to cheer me up..of course, we don’t order in. We cook our pizza.
We bought dough at Publix for the quickest, easiest pizza. I requested my much beloved pineapple as a topping.
For our pizza, we picked fresh herbs from our “garden” we picked some thyme, greek oregano, and sweet basil. Chopped them up and sprinkled them on top..

I obviously don’t win for best shaped pizza, but it tasted darn good!

I love Amber beers, and this is one of my faves..and it’s a light beer, so I feel better about it.

I ate all but one piece. I usually get full before this point, today was no exception but it’s so yummy and I can’t help myself. Oh well, I really don’t feel too bad about it, it was yummy and worth it.

A little balsamic and EVOO to dip our crusts in. I really really love balsamic.
Okay, I have such amazing friends..case in point: I got a text tonight from Ashley telling me to look outside my door. I handed Adam the phone and opened the door to find an innocent Whole Foods bag sitting on my doorstep. Inside it held a sweet gift from an amazing friend..

It definitely did make my day SO much better!! Ashley, you’re amazing thank you for making me smile and making me realize how great my friends are. You are wonderful, and you are going to KICK BUTT this weekend at that marathon!! You are ready, beautiful and capable!
Thanks for sweetening up my day more then you know!
I am going to break into this right now, it’s a carrot cake cupcake from whole foods so it’s healthy..right?

Nutrish-mosh..
So I dug into the pantry, into the fridge and grabbed anything veggie or veggie like and threw it in a pan. I had a small bit of frozen brocc, green beans, and what looks like a bit of tomato. I added half a can of french cut green beans, some chopped up baby carrots, 1/4 cup of corn, and spinach that was on it’s last leg along with some S&P, garlic powder and paprika. Towards the end I threw in a black bean burger and cut it up with my spatula till it all cooked together. Then I poured it into a bowl..introducing:

A nutrish-mosh. Just your random, mish-mosh of everyday veggie and healthy things thrown together into a yummy bowl of goodness!

With a side of sandwich thin graced with a smidge of smart balance and a sprinkling of garlic powder. YUM!!
It was a beer kind of night:

The hubs looked at me and said “well, I know what we’re having for dessert” and I was expecting a sketchy comment to follow..but he told me to look in the pantry..I got excited. For good reason:

Mmm..that would be(starting in the upper left corner) a white chocolate raspberry, pumpkin with cream cheese frosting, red velvet with cream cheese frosting, and Dulce de Leche. Mmmm!
Tonight we split two and saved the others for tomorrow..we chose the pumpkin and Dulce de Leche..

Check out the Dulce..that’s filled with goodness right there! They were both incredible! Their pumpkin though. Unbelievably YUM!
Didn’t get to work out. I had so much to catch up on. I know, I know..LAME! Tomorrow should be home hot yoga! Adam is getting my space heater out of our “storage” so I can really loosen up!
Now I am off to bed, super late for me! At least it’s Friday..”Fun Friday” at school. So ready for the weekend!

Sweet Sunday brew.
Well hello dear friends,
I had a great Sunday! It certainly made up for the Halloween I had. But you know what? You have bad days, you vent, and you move on to better ones. So on that note..let’s move on!
This Sunday started off with Adam making me tea..AND photographing it for me!

He did a great job, didn’t he? I was so proud! Only a week, and he’s got the “husband of a food blogger” thing down..
Speaking of which..YAY for one week done in the life of TBF!
I am hooked..and it’s only going up from here!
For breakfast I had my first bowl of oat bran! I LOVE IT!! I think the one thing I don’t love about oatmeal is the extra chewyness..and oat bran had a lot less chewyness. Perfecto for Katy. Adam cooked up what the bag said, and ended up making a ginormous bowl(that proceeded to boil over) in Adam’s words: “next time biiiiiiiiiiiiiiigger pan!”.

My lovely bowl consisting of the bran of oats. As well as honey and brown sugar! Mmmm..It did need some nanners though. I ate about half of this bowl. I also had a Stonyfield yogurt. Mmmmm..it’s a daily habit. Love it!
After I actually ate a decent breakfast this morning, we headed to church. I was reading the scripture on stage this morning (Acts 9:1-22) boy was I nervous! Aye yaye yaye! I can teach 20 kids everyday but when it comes to my church..I had major butterflies. But I got up there (shaky as it was) and did it and it went well. I didn’t turn red until AFTER I sat down. Success..haha!
We were heading home when we received a call from my in-laws. I listened as Adam talked and told them: “Well, I don’t think so..we were just planning on relaxing the rest of the day. Yesterday was pretty stressful. I’ll ask Katy, but for now count us out.” I was very curious as to what he politely turned down on my behalf. Apparently, they had just found out that Orlando has a brewing company! I was surprised and really excited, I asked Adam if he wanted to go and he was game! I called my mother-in-law and told her and heard my father-in-law laughing in the background at how quickly I agreed. But first: lunch!
Adam requested some mac & cheese so I cooked up come Annie’s:

I mixed the hot noodles with some fresh spinach and mixed so that it would wilt, and added about 1/4 cup of shredded cheese and mozzarella to the mix. A little garlic powder, S&P later and we had a delicious protein-packed mac and cheese!

I had a Boca Chik’N patty on a whole wheat Arnold’s sandwich thin with a little ketchup. Also some carrots and celery on the side.

Awful picture, but we were in a rush to get to the brewery! Oh and I had already eaten a few carrots before remembering to take a pic!I ate about half of the bowl of mac & cheese..super filling!

Sweet pumpkiny goodness in one little bite. I had to give the kiss a kiss it was that good!
The brewery is located in downtown Orlando. It was actually on the same street where I did my flowers for my wedding!
It’s called the Orlando Brewing Company and better yet..it’s a certified organic brewery. Oh yes, they were speaking my language! We pulled in with this sign in front of our car:

Ahh yes, I was excited! I loved the atmosphere!




Don’t worry….be hoppy!
It was pretty empty since it was a Sunday but Monday-Saturday they have free tours at 6pm. We didn’t tour today since it was Sunday, but we’ll be back! My Father-In-Law got us two full samplers so each couple could share..they were pretty large samples.


We tried about 15 beers in total, but now worries..I didn’t feel it tooooo much(which surprised me!).
We shared all of them and some of them we didn’t even finish.
We also snacked on some pretzels.

Oh and we snagged Halloween candy..not that we need anymore with a whole plastic pumpkin filled!
All in all a wonderful day! Dinner is cooking, this time a sweet potato is definitely on it’s way for moi. Yum yum yum! Recap on that tomorrow probably. My lovely husband agreed to watch “Ghost of Girlfriends Past” with me. Thanks for the chick flick Adam! I owe him some macho-action packed-killing people-lots of blood-machine gun-kick butt-sci-fi movie now. We trade off.
